Using the standard 4:1 formula, bring 4 cups of water to a rolling boil and blend in 1 cup oats. Stir continuously with a wooden spoon (does not have to be slotted). Recommend 3 quart saucepan — 2 quart pan will overflow during the stirring period. Stir continuously until oats become creamy. Obviously, creamy is subjective — but trust me, you will figure it out. The oats go from loose to somewhat tight to creamy in about 10 minutes or so (depending on altitude).
When the oats look creamy on the spoon, reduce to simmer for 20 minutes. Stir frequently; serves 4. I prefer my oats w/ honey and just a pinch of salt. Add a bit of milk or cinnamon to taste.
